Ma Susu's Homemade Spaghetti Sauce

Ingredients: For 1 Serving: – 1 medium onion, diced – 2 garlic cloves, minced – 1 green bell pepper, diced – 1 tablespoon olive oil – 1/2 pound lean ground turkey – 3 ounces tomato paste – 1/2 of a 28-ounce can chopped tomatoes, in juice – 1/4 cup water – 1/2 teaspoon kosher salt – Pepper, to taste (optional)

For 2 Servings: – 2 medium onions, diced – 4 garlic cloves, minced – 2 green bell peppers, diced – 2 tablespoons olive oil – 1 pound lean ground turkey – 6 ounces tomato paste – 1/2 of a 28-ounce can chopped tomatoes, in juice – 1/2 cup water – 1 teaspoon kosher salt

For 3 Servings: – 3 medium onions, diced – 6 garlic cloves, minced – 3 green bell peppers, diced – 3 tablespoons olive oil – 1 1/2 pounds lean ground turkey – 9 ounces tomato paste – 1/2 of a 28-ounce can chopped tomatoes, in juice – 3/4 cup water – 1 1/2 teaspoons kosher salt

Instructions: 1. Heat a large sauté pan over medium heat and add the olive oil. Add the onion, garlic, and bell pepper and sauté for 5 minutes.

Add the ground turkey and use a spoon to break it into small pieces. Cook until browned, about 5-7 minutes. 

Add the tomato paste, chopped tomatoes, water, salt, and pepper. Stir and bring to a boil, then reduce to a simmer, cover, and cook for 20-30 minutes until the sauce is thickened. 

Toss the sauce with cooked spaghetti noodles or pasta of choice. Serve sprinkled with Parmesan cheese and red pepper flakes if desired.
